Today’s recipe is for an aubergine curry. Every time I have an aubergine I tend to make my red lentil and aubergine moussaka recipe so this time I challenged myself to make something different with it.
I’ve used delicate fragrant spices in a thick tomato sauce to make a fairly healthy comforting dinner. If you aren’t an aubergine fan this dish would work well substituting it with either your own choice of vegetables, chicken, lamb or king prawns.
