One thing I don’t come across often is a gluten and dairy free donut, the last one I had was at the Allergy and Free From show in London. It was a strawberry and chocolate glazed donut and I loved every bite.
I kind of divide my donut recipes into two categories – cakey and bready. The cakey ones are yeast free, quicker to make and you make the batter similar to a basic sponge cake. The bready donut has yeast and therefore takes longer to make as you have to wait for the donuts to rise before frying.
