It hasn’t been the best start to the morning – the postman ringing the doorbell at 7am, a lovely hairball from the kitten and the worst of all I’ve run out of coffee beans. However, I’m enjoying some peanut butter waffles and have managed to dig out some instant coffee so the world is starting to look like a better place already.
A few months ago I did a gluten and vegan seven day meal plan and it seemed to be quite popular so I think I might run this feature again with gluten and dairy free recipes.
Today’s recipe is for something a little bit different – a courgette relish. If you frequently follow my site you will have noticed that I had a large amount of courgettes to do something with. The first recipe I shared was gluten and dairy free bacon, cheese and courgette tart and this relish is how I used the rest of them.
