Gluten and Dairy Free Spinach and Ricotta Pasta

Hello Everyone,

Hope you are all having a relaxing Sunday. I’ve been hard at work getting ready for the launch of my first cookbook in print, fingers crossed it should all be ready for me to open my online shop and start selling the book within the next few days. More details to follow as soon as it is ready to ship.

As promised when I posted my recipe for how to make dairy free ricotta, I shared my sweet ricotta recipe on Friday and this is my savoury recipe. I stuck with a traditional spinach and ricotta spaghetti dish that can be made really quick – sometimes the simple recipes are the best.

This afternoon I’m going to have a break from cookbook work and have a shot at developing a recipe for a courgette and bacon tart.

Enjoy!

Gluten and Dairy Free Chocolate and Orange Ricotta Tart

Following on from my last blog post where I made my own dairy free ricotta style cheese I promised I would share a couple of recipes using it. I wanted to have a go at using the ricotta in both a sweet and savoury dish. For the sweet dish I’ve made a chocolate pastry case and filled it with a chocolate and orange ricotta filling.

I kept some of the chocolate sauce from the recipe to serve alongside the tart with a scoop of dairy free ice-cream.

Enjoy!

I’ve been experimenting in the kitchen recently trying to make some of the basic items I tend to buy. Last week I posted my recipe for homemade almond milk and this week I’m concentrating on dairy free ricotta. I made this recipe with soya milk as I found from my trials that it curdled the best of all the dairy free milks. I’m currently working on an alternative method using almonds for those of you that can’t have soya so watch out for the coming soon. I’m also working on some recipes for dairy free butter and a cashew nut cream.

Ricotta is a really versatile ingredient and I used my cheese to create both a savoury and a sweet dish. I’ll post the recipes I made using the cheese so look out for gluten and dairy free spinach and ricotta spaghetti and my gluten and dairy free chocolate orange ricotta tart.

Enjoy!

Gluten and Dairy Free Salted Caramel Brownies

Hello Everyone

Sorry I haven’t posted a cake recipe for a while but I’ve been working on my new book which contains 50 brand new gluten and dairy free cake recipes. With all the baking going on for the new book I’ve been enjoying creating other recipes for the website.

As it’s my birthday today I thought I would share a new cake recipe – you should always share cake joy on your birthday. I actually made these at the weekend and took them with me on our day out at the Edinburgh Fringe Festival. I’m known for always having gluten and dairy free cakes with me – this time we sat in a pub watching a comedian enjoying a sneaky little brownie.

I love the rich chocolatey taste of brownies and what can make them better but the addition of some dairy free salted caramel sauce. You might not want to use all of the caramel sauce so the remaining sauce can be stored in the fridge and reheated when you want to use the rest. You can also add more or less salt depending on your tastebuds.

Enjoy!

Gluten and Dairy Free Herby Waffles with Chorizo & Fried Egg

Hello everyone, hope you are all having a great weekend. It’s festival time in Edinburgh so the city is an exciting place to be in (but very busy)! We are heading into town today to see a few shows and get some great food. To kick start the day I’ve made this brunch using one of my favourite ingredients to cook with – chorizo.

It is such a flavoursome ingredient to add to a dish, this time I’ve combined it with waffles and a fried egg for a little treat. My warning as always when cooking with chorizo is to carefully check the ingredients as some chorizo contains milk. I used the Tesco individual chorizo sausages and they are both gluten and dairy free.

Have a great day whatever you are up to.

Enjoy!

Gluten and Dairy Free Tutti Frutti Breakfast Sundae

I’m trying to get up and make beautiful breakfasts like this everyday. I always have breakfast but I’m guilty of rushing around in the morning before I get the train to work and end up taking breakfast with me to eat on the go. So far this week my mornings have been organised and civil – we will see how long that lasts for!

This breakfast is super refreshing and tastes like a proper treat, you can use any flavoured or natural dairy free yoghurt you like, I made this with Tesco free from raspberry and mango yoghurts.

This recipe calls for you to experiment with your own fruit combinations and toppings.

Enjoy!
