I was pretty excited about this recipe for two main reasons:
- I love both sweet potatoes and pizza, and
- It is much quicker to make pizza from scratch – no hanging around waiting on dough to rise
I wasn’t quite sure how something as soft as a sweet potato could make a crispy pizza base but believe me it does. Spurred on by my recent success at making crisp sweet potato chips I took on the task of making a pizza base from sweet potato. I’ve said in the recipe to add in 4 tablespoons of gluten free flour, you may have to adjust this slightly depending on your potatoes – basically you are looking for a dough like consistency.
I kept it simple topping it with some dairy free cheese (Violife) and some cherry tomatoes but it will make a great basic recipe to add your own combinations to. I’m thinking maybe chorizo as it goes so well with sweet potato.
