Sometimes you have to look for the positives in a situation and one of the positives of coeliac disease for me is being forced to try new foods. Quinoa is something I hadn’t tried before my diagnosis but now I’m a real convert. Cutting out gluten completely has made me experiment with new grains for making my porridge style snacks in the morning. I’ve already shared my recipe for banana and cinnamon quinoa pudding and this is my new version – chocolate and berry. Of course I’ve topped it with my favourite dairy free ChocShot sauce.
