Chinese food can sometimes be quite difficult to enjoy for coeliacs as it often contains soy sauce. I’m lucky that I have a Chinese restaurant near work that has a good choice of gluten free dishes. Dinner there on Friday night has inspired me to create some gluten and dairy free Chinese dishes you can make at home. Don’t be put of by the ingredient list for this dish it is actually pretty easy to put together.

Sometimes you have to look for the positives in a situation and one of the positives of coeliac disease for me is being forced to try new foods. Quinoa is something I hadn’t tried before my diagnosis but now I’m a real convert. Cutting out gluten completely has made me experiment with new grains for making my porridge style snacks in the morning. I’ve already shared my recipe for banana and cinnamon quinoa pudding and this is my new version – chocolate and berry. Of course I’ve topped it with my favourite dairy free ChocShot sauce.

Morning everyone, hope you are all having a great weekend. Although this is a very simple recipe I thought it was worth sharing more for inspiration for a breakfast/brunch/lunch – or any other time you want to eat it.

If you can’t have eggs then skip the part where you soak the crumpet in egg to make it like French toast.

I found gluten and dairy free items readily available in the supermarkets dotted throughout central Reykjavík, we used 24 7 and Krona. Krona had a large selection of Violife dairy free cheese and a number of gluten free items I bought for cooking breakfast and making pack lunches for our day trips.

There is also a health food store in the main street in Reykjavík, called Heilsuhusid. They stocked gluten free flour, biscuits, pasta, cereal and dairy free milk and yoghurts.

Breakfast

I made a number of breakfasts in our apartment due to us having to be up and out early for our scheduled day trips. On the last day we went to Edlur and Is Creperie. They have gluten and dairy free crepes which you can choose what you fill or top with. I went with peanut butter and fresh berries which I enjoyed with a freshly squeezed orange juice.

We tended to make our own packed lunches and take them with us – it was easy to make this suitable for me with the gluten and dairy free things I was able to purchase in the shops. Meat soup and its vegetable alternative is a very traditional and popular lunch in Iceland – we were lucky to be given this as part of our day trips – both were gluten and dairy free.

Dinners

Icelandic Fish and Chips offer a good choice of clearly marked gluten and dairy free dinners. Located in the harbour and offering the freshest of fish I had oven baked cod with lemon and sundried tomatoes, oven baked chips and a beautiful salad of spinach, peppers, mango and toasted coconut. For dessert I had the gluten free chocolate cake.

Saffran also had a good choice of gluten and dairy free options, I went with brown rice, tikka chicken with curry sauce, roast sweet potato and salad. It was very tasty and reasonably priced.

After a long but amazing day dog sledding we got a takeout from the Nepalese Kitchen, you could also chose to eat in. I had the onion and mushroom bhajis for starter and achari salmon with cashew nut spiced rice – it was amazing.

Sushibarinn offers a wide variety of sushi which can easily be made gluten and dairy free, they even stock a gluten free alternative to soy sauce for dipping.

Glo is a healthy restaurant that always offer at least one choice that is both gluten and dairy free. I went with the raw pizza and three different side salads. Fresh and tasty – again we had ours as takeaway rather than sit in.

Hello Everyone, hope it is a beautiful sunny day for everyone like it is here. Today’s recipe is for gluten and dairy free double chocolate coconut fudge.

I often visit this fudge shop in Edinburgh that makes a dairy free fudge and chat to the guy about how he makes it. Last time I went he was telling me he used creamed coconut block which can easily be found in the supermarket. This is my take on double chocolate fudge using creamed coconut, hope you like it.

Gluten and Dairy Free Raspberry and Orange Smoothie

I’m not very good at judging which recipes will be more popular than others, somethings I think are great might not have as many views while others I might have doubts about sharing are very popular. I often wonder if people want to see the simple smoothie recipes but one of my most read posts a few weeks ago was the recipe for the nutritious chocolate smoothie. Given that I thought I would share another smoothie recipe, this time one with a summary feel from the raspberry and orange.

I need this fruit boost to counteract all the cake I’m eating while I’m working on the new e-book – gluten and dairy free cakes. So far I’ve got the chapters defined and have finished and photographed 10 of the 50 recipes. The outline of the book so far looks like this:

Hello Everyone

Hope you are all having a great week, I’m having an amazing time in Iceland. Yesterday I had the pleasure of going dog sledding with the most amazing huskies and today I went into a (dormant) volcano.

Before I went on holiday I went through a phase of making waffles. I tend to do that – not make them for a while and then eat them for a few weeks. I wanted to have a go at a simpler recipe for waffles and I think this recipe ticks the box. My previous waffle recipe had quite a few ingredients including dairy free yoghurt, this one has less ingredients and you can also use this to make pancakes if you don’t have a waffle iron.
