Healthy Three Ingredient GF DF Banana Pancakes

I’m always experimenting with pancakes recipes, I’m known amongst friends and family as a pancake lover! Today I’ve had a go at making a simple healthy pancake for breakfast with only three ingredients. The oats provide the fuel for the rest of the day, some protein from the egg and the natural sweetness from the banana. I hope you enjoy them as much as I did.

Gluten and Dairy Free Poached Pear Chocolate Cake

This makes a great dessert if you have people round for dinner or maybe just for a treat for yourself. It looks fancy, tastes great but it is super easy to make. Pears and chocolate are a classic combination – soft juicy pears suspended in a rich chocolatey cake! You can enjoy this hot from the oven or if you have leftovers they are just as tasty cold.

Baking Gluten and Dairy Free Chocolate Orange Brownies with Shob

He doesn’t bake but wanted to make this first cake. He also wanted to make it suitable for his gluten free work buddies so that’s when I decided to help out.

He followed a simple recipe and made a batch of gluten and dairy free chocolate orange brownies.

Now he has happy work buddies and he can proudly say he can bake a cake:

If you are in need of a little inspiration, do a Shob and try this simple gluten and dairy free chocolate orange brownie recipe:

Ingredients:

  • 115g dairy free chocolate chips
  • 2 teaspoons orange zest
  • 115g dairy free spread
  • 3 eggs
  • 200g light brown sugar
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon vanilla extract, optional
  • 110g gluten free plain flour
  • 30g gluten free self raising flour

Method:

  1. Line a 13 by 9 inch shallow baking tin with tinfoil leaving the edges over the tin so the brownie can be easily lifted out the pan
  2. Preheat the oven to 180 oC
  3. In a small pan or in the microwave, melt together the chocolate and the dairy free spread
  4. Leave aside to cool
  5. Beat together the eggs, sugar and vanilla extract
  6. Stir the chocolate mixture, orange zest, flour and xanthan gum
  7. Pour into the pan and bake in the centre of the oven for 30 minutes
  8. Leave in the pan to cool
  9. Carefully lift out the pan and slice into squares

Gluten and Dairy Free Salted Cashew and Sultana Bars

I originally thought about making these with chocolate chips and peanut butter which is two of my favourites flavour combinations. I thought I would try and make a breakfast bar with something different for a change and eventually settled on cashew nut and sultana. These bars are really easy to make and last for a couple of weeks if you store them in an airtight container. Perfect for breakfast on the go or for popping in your bag for a quick snack on a busy day.

Gluten and Dairy Free Garlic Mushroom Spaghetti

I’m always trying to find easy dinners to through together on a week night that taste great and I don’t feel like I missing out because I can’t have gluten and dairy. I hope this recipe ticks all of these boxes, I made this with Tesco’s free from spaghetti and Alpro’s dairy free rice cream.

Gluten and Dairy Free Mint Choc Chip Muffins

I haven’t cooked a lot with mint, I think I only have two mint recipes on the website – candy cane cupcakes and mint crunch brownies. I was looking for a quick recipe to make on a week night to take in some baking to the office. These muffins can be prepped in 10 minutes and only take 25 minutes in the oven – the perfect easy recipe when you don’t have time.

I of course had to taste one for quality control purposes! Perfect when they have cooled a little but the chocolate chips are still melted.
