Flashback Recipe – Gluten and Dairy Free Winter Spiced Brownies

Image Text

The website was relatively new last year and I didn’t do a huge amount of Christmas recipes. There were a couple of recipes I did make that I really enjoyed and I’m planning on making again this year. Since I have a lot of new followers since last Christmas I thought I would share a few of last Christmas’ recipes over December.

This recipe is just my basic gluten and dairy free chocolate brownie recipe adapted to give it a Christmas twist. I’ve added some spices (cinnamon, nutmeg and ginger), cranberries and cashew nuts to make the Winter Spiced Brownie. Package them in pretty gift boxes to make a gluten and dairy free present.

Enjoy!

Gluten and Dairy Free Christmas Granola

For those of you that follow the site regularly you will know I love making my own granola and frequently post different granola recipes. This weekend I decided to give my usual granola a bit of a Christmassy spin and incorporate some seasonal flavours into it – cranberries, oranges and cinnamon. A perfect start to the wintery mornings.

Gluten and Dairy Free Christmas Crumble Bites

Another Christmas recipe – I no it’s early but I try and eat as much mince meat as I can in the run up to Christmas I love it so much! Quite a few shops and cafes stock these Christmas crumble bars some are gluten and dairy free (Costa) and others aren’t. Earlier in the year I made a Rhubarb crumble bar so I’ve used that as the basic recipe and given it a Christmas feel. I actually used a rum and raisin mince meat I bought in Lidl that was naturally gluten and dairy free – very tasty.

Gluten and Dairy Free Christmas Pudding

My mum has always cooked us an amazing Christmas dinner for the last 33 years of my life – breaking with tradition this year I’m going to cook the family Christmas dinner – so the pressure is on! One of the first things I decided to think about was how to make a gluten and dairy free Christmas pudding. This simple recipe can be prepared in advance and stored for up to 3 months.

So here it is – my first Christmas inspired recipe. I know it is still pretty early to be thinking about Christmas but I wanted to give you the chance to ponder over the recipes and also if you wanted to practice any of them. This recipe isn’t an out and out traditional Christmas one – I actually made it a few months ago for my Dad and it looked quite Christmassy so I decided to keep the recipe for later on in the year to share.

Gluten and Dairy Free Raspberry & Linseed Muffins

I’ve started baking a lot with frozen raspberries – I find they tend to hold there shape better than fresh raspberries, the colour doesn’t bleed into the sponge and they defrost perfectly when baking. I’ve also recently discovered linseed as I picked up a packet out of curiosity. I’ve combined the two in this recipe to create a moist raspberry muffin with a little crunch on top from the linseed.

Enjoy!
