The first of many of my autumnal pumpkin recipes. I love baking with anything that brings a natural sweetness and its own unique flavour and pumpkin puree is up at the top of my list of favourite ingredients. I used to always make pumpkin soup but lately the website has encouraged me to get more creative with naturally gluten and dairy ingredients hence the huge amount of pumpkin recipes you will see over the next few months – so sorry if you aren’t a fan!

Gluten and Dairy Free Mint Crunch Brownies

I do like a good sticky brownie which probably explains why I have quite a few brownies recipes on here already but hey there is always room for one more. This time I’ve decided to go for mint crunch, if you can’t be bothered crushing up the mint sweeties then replace them with some peppermint extract, you’ll get the same flavour without the crunch.

I’m one of these people that is always up to something so I’m constantly on the look out for quick dinners that I can put together in a hurry. This meal is super tasty and can be made in under 30 minutes so it ticks all the boxes.

If you can’t have nuts then omit the peanut butter, the sauce won’t be as creamy but it will still taste good or you could try one of the ‘FreeNut’ butters.

Gluten and Dairy Free Cinnamon Pancakes with Apple, Yoghurt & Granola

One of my favourite breakfasts is pancakes. It’s funny because before I was diagnosed I wasn’t that great at making them, since I’ve been gluten and dairy free I’ve been happy with how my pancakes turn out so I’m always experimenting with new flavours and toppings.

This morning I made cinnamon pancakes and topped with apple sauce, dairy free yogurt and a sprinkle of gluten free granola.

Gluten and Dairy Free Molten Chocolate Cakes

These cakes are super easy to make and only take 10 minutes in the oven so they can easily be put together for a mid week dessert treat without the hassle! The most exciting thing about these cakes is cutting them open and watching all the warm gooey chocolate sauce running out. If you prefer your cakes a little more firm then bake them for 2-3 minutes more.

Make them when you are ready to eat them because if you leave them sitting once you take them out the oven then they will continue to cook and the middle will be more cake and less molten!

Gluten and Dairy Free Creamy Chicken & Chorizo Pasta Bake

One of the things I really miss is creamy pasta sauces, the other day I was out for dinner and had food envy over my friend’s creamy tomato chorizo pasta. This is my gluten and dairy free version of the dish, just be careful and check your chorizo doesn’t contain milk – some do and some don’t. It didn’t photograph very well, anything baked in a big dish always tastes amazing and photographs poorly!

Gluten and Dairy Free Butternut Squash, Smoked Bacon & Chilli Soup

When I buy butternut squash I tend to always make the same thing with it – Butternut Squash and Sweet Potato Soup. While I love that recipe I thought I would try and make another soup – I loved the idea of combining the sweetness of the butternut squash with the smokiness of bacon and the spicy kick of the chilli. It’s also starting to get colder here so this dish is the perfect transition into the beginning of my autumn recipes.
