Gluten and Dairy Free Apple Pie Cupcakes

These cupcakes are an attempt at creating apple pie and ice-cream in one little cake and all gluten and dairy free. The cupcake is flavoured with cinnamon with an apple sauce surprise in the middle and topped with frosting to represent the ice-cream. The best thing about these cupcakes is that the chef gets to eat the bit of sponge you cut out to pipe in the apple sauce but don’t tell anyone!

Gluten and Dairy Free Kedgeree

Kedgeree is a smoked fish and rice dish flavoured with curry spices. Kedgeree is thought to have originated from a traditional Indian dish Khichri, and was brought to the United Kingdom by returning British colonials. It is mainly eaten as a breakfast dish as originally in the days of no refrigeration it was a way of using up the leftovers from the day before’s evening meal.

Hello Everyone

Hope you are having a lovely weekend. The e-book is in the final stages of editing and I’m hoping to have it available to download next weekend, I’ll keep you posted.

I’m the train at the moment so thought I would share a simple recipe with you this morning. This soup has a lovely rich flavour from the roasted tomatoes and the added surprise of some gluten free pasta. I’ve always found it difficult to find a gluten free soup pasta so I tend to just break spaghetti into small pieces.

Gluten and Dairy Free Spiced Lemon and Sultana Cookies

Nothing smells better than warm cinnamon coming from the oven and these cookies baking in the oven smell amazing. The sweetness of the spices are balanced out by the zestiness of the lemon. As you probably noticed from the amount of my recipes that contain cinnamon I’m a huge fan. If you aren’t as crazy about cinnamon as I am you can omit the spices from these cookies and still end up with a lovely lemon and sultana cookie.

If you don’t finish these cookies or want to make something in advance they actually freeze very well. Either defrost them at room temperature for a few hours before enjoying or pop in the microwave for 30 seconds – the slightly warm cookie tastes very nice.

Gluten and Dairy Free Salted Caramel Ice-Cream

A few weeks ago I posted my recipe for peanut butter chocolate chip ice cream which sparked a Facebook discussion of what favours of ice-cream you would like me to give the gluten and dairy free treatment to! One of the most popular requested was salted caramel so I’ve had a go at making it. I’ve added 1/4 teaspoon of salt which, for me, gives a nice balance between sweet and salty, depending on your tastes you may want to increase or decrease this.

I’m still working on the other flavours requested including raspberry ripple and mint chocolate chip.
