Pretty little gluten and dairy free cakes perfect with a cup of tea/coffee for an afternoon treat. This is a less sweet version of carrot cake but I’ve made sure the cake remains moist with the addition of a mashed banana.

This recipe would also work well as a plain loaf cake without the maple frosting, just pour into a 900g loaf tin and bake for 45 minutes.

Gluten and Dairy Free Lemon and Poppyseed Mini Loaves

On a recent trip to Lakeland I bought a big baking tin that looks a bit like a muffin try but it makes little loaf cakes instead. I decided to give it a go the other day and baked these lemon and poppyseed loaves. As not everyone is obsessed with different shaped baking tins you could make this as one large cake in a 2lb loaf tin but increase the baking time to 45 minutes.

When I was looking for a dairy free yoghurt to you in this cake I stumbled across Alpro’s lemon and lime yoghurt so I used that just to increase the citrusiness (not sure that is an actual word) of the cake.

Gluten and Dairy Free Roasted Tomato and Chilli Soup

I always like to have a stock of soup in the freezer for lunches etc and a particular favourite of mine is tomato soup. This version contains tomatoes that have been roasted in the oven with olive oil and garlic for maximum flavour. It also has a mild chilli flavour, if you like your soup spicy add a few more chilli flakes. The best thing about the soup though is that all the ingredients are naturally gluten and dairy free.

Gluten and Dairy Free Apple, Banana and Sultana Muffins

These muffins are super moist due to the apple and the banana, you would never know they are gluten and dairy free. I’ve made the large sized muffins you would get in a coffee shop but if you prefer smaller muffins this mix would probably make about 15 but cut the cooking time down to about 20-25 minutes.

Gluten and Dairy Free Lemongrass Salmon with Coconut and Chilli Noodles

I love the King Soba noodles, I used the pumpkin and ginger brown rice gluten free noodles to make this dish. This dinner can be quickly put together making it the perfect end to a busy day. You can substitute the salmon for more vegetables or chicken or steak, whatever takes your fancy.

Gluten, Dairy and Egg Free Banana Sultana Scones

I eat quite a lot of scones and just to make things a bit different I like to experiment with new flavours. This scone has a subtle banana flavour and I’ve added in a sprinkling of sultanas. These scones go nice filled with the traditional jam and dairy free spread but also with some more mashed banana and dairy free chocolate spread.
