Gluten and Dairy Free Banana Chocolate Chip Flapjacks

I’m a big fan of flapjacks and I’ve recently being experimenting with different flavours. This recipe is for banana choc chip (dairy free chocolate of course) flapjacks. The banana makes the flapjacks lovely and moist and the chocolate chips kind of melt and swirl though the oats. I made mine, cut them into squares, individually wrapped them and then popped them in the freezer to pop into my lunch box for the next few weeks.

I have to start thinking of my next flapjack flavour combination now!

Gluten and Dairy Free Chicken Jalfrezi

I’m a big fan of curry and my local curry restaurant does a fantastic gluten and dairy free curry. As I probably eat there a little too often I thought I would try making one of my favourite curries, chicken jalfrezi, at home. As it is traditional to cook with ghee (clarified butter) I have substituted this for a couple of tablespoons of melted dairy free spread. This adds to the richness of the curry but it can also be left out if you don’t fancy it or don’t have any dairy free spread to hand.

Coffee and chocolate just go together so well and is the inspiration for this recipe. These cookies are slightly crisp on the outside and soft on the inside, perfect! Everyone deserves a little cookie for a treat and hopefully these gluten and dairy free ones hit the spot.

If you don’t want 15 cookies at once you can freeze the raw cookie dough for another time.

This is my little (hopefully fancier) nod to the pot noodle but gluten and dairy free! I made this as an experiment to see if it would be suitable for an easy take to work lunch and to use up some leftovers. It’s not really a recipe as you can put anything you fancy in it. If you want to make it vegetarian substitute the chicken with more veg and use a herby stock as the base.

Gluten and Dairy Free Croissants

I’ve tried a couple of times to make croissants that are gluten and dairy free and I’ve never been entirely happy with the results, until today! As the dairy free spread is fairly difficult to work with I’ve changed the traditional technique of rolling the ‘butter’ into the dough with rubbing the dairy free spread in and it works well.

So croissants are back on the menu even if you are gluten and dairy free.

Gluten and Dairy Free Toaster Crumpets

I love a little toaster crumpet topped with some peanut butter and mashed banana! They are actually fairly easy to make and don’t take long at all, you only need to leave the yeast for 20 minutes to activate. I tend to make these in a big batch, freeze the rest and when I want one I put it straight in the toaster on the defrost setting.
