Cheesecake isn’t the obvious choice for people on a gluten or dairy free diet as nearly every ingredient contains one or the other. Luckily for us I think dairy free cream cheese (I use Scheese) and gluten free digestive biscuits make great cheesecake. Rather than make one large round cheesecake topped with fruit I decided to make a square cheesecake, swirl the fruit through it and cut into bars.

Due to my obsession my peanut butter I’m already thinking of a snickers type cheesecake bars – chocolate cheesecake with swirls of caramel and peanut butter, look out for that recipe soon!

Gluten and Dairy Free Chicken Fajita Salad

This recipe is a lovely fresh take on traditional fajitas. If I’m going to be honest with you this recipe was actually born from my laziness. I got home from work and couldn’t be bothered making gluten free tortilla wraps so decided to make a salad instead. I served mine with some smoked chilli mayonnaise and chorizo flavoured tortilla chips.

Perfect little treat sized gluten and dairy free peanut butter and chocolate chip cookies. I’ve sandwiched some of these cookies together with peanut butter and the rest with dairy free chocolate spread. You can buy a dairy free chocolate spread such as Plamil from your local health store.

Gluten and Dairy Free Blueberry and Lemon Oat Muffins

I was testing out Provena’s gluten free oat flour and thought I would make some healthier blueberry muffins – these work out at about 175 calories for a large muffin (the size you would get in a cafe)! It’s the first time I’ve baked with oat flour and I’ll definitely be using it in some future recipes.

Provena Gluten Free Jumbo Oats Review and Recipes

Tonight I’m reviewing Provena’s gluten free Jumbo Oats. I talked in my previous post about the brand and how they are manufactured to ensure that no cross contamination occurs with gluten free cereals so I won’t cover it again, but if you haven’t read it check out the post below for more details.

The Jumbo Oats are 100% gluten free oats, no other hidden nasties! The oats in the packet are exactly as described – jumbo, none of that powdery stuff they pass off as oats!

Being Scottish the obvious thing for me to make with the oats was a big bowl of porridge and the oats definitely hit the mark. I made my porridge using a combination of dairy free milk and water, I also added some grated apple, sultanas and cinnamon. It made a perfect gluten and dairy free breakfast and very healthy as the oats are high in fibre and provide slow release energy. These oats are extremely versatile and I decided to push the boat out and make some other gluten and dairy free treats.

So else what did I make with my box of Provena Jumbo Oats?

Granola is one of my favourite breakfasts, especially when it is accompanied by dairy free yoghurt and some fresh berries. Gluten and Dairy Free Rhubarb Crumble Bars

Rhubarb always makes me think of my Grandma, she grew the best rhubarb I’ve ever tasted and I used to eat a tonne of it when I was a little girl. Rather than make the traditional rhubarb crumble I thought I would make some bars – basically its rhubarb crumble on an oaty biscuit base, and of course gluten and dairy free.

You could try making these with any stewed fruit you like, I’m thinking a cherry version or plum and ginger or maybe apple and cinnamon! You can get the recipe for these gluten and dairy free rhubarb crumble bars by clicking here

In summary I would say the one word that sums these oats up is quality. As I said before I buy a lot of gluten free oats and I get fed up when half the packet is filled with something that looks like saw dust! The Provena oats packet was full of lovely, good quality oats – no saw dust in sight!

Provena Gluten Free Oats

For those of you that follow me regularly you can probably guess that I’m a big fan of gluten free oats as they feature in a lot of my recipes. A ‘gluten free’ oat is a bit of a funny concept as oat protein does not naturally contain the gluten found in wheat, rye or barley as oats come from a different family of cereals.

Unfortunately traditional farming and processing techniques means that oats become cross contaminated with gluten containing cereals making the oats unsuitable for consumption by coeliacs. So for an oat to be gluten free it must be farmed and processed away from other cereals containing gluten.

I was excited when gluten free oat manufacturer, Provena, got in touch to tell me about their product range, They kindly set me some samples to try and I was so impressed I wanted to share my thoughts with you guys and the recipes I made.

I was reassured to see the storyboard on http://www.provena.fi/en/gluteeniton-kaura that showed how they keep their oats gluten free. This is a summary of their process:

  • genetically pure oats are planted in oat only fields
  • cultivation on a farm that doesn’t handle other cereals
  • grain inspected during growing season
  • harvesting with dedicated machinery
  • drying in a dedicated dryer
  • stored in a dedicated silo
  • silo oats are sampled and inspected
  • transported in a dedicated vehicle
  • sampled and inspected again
  • stored in a dedicated silo in the factory
  • sampled and inspected again
  • manufactured and packaged in a factory which only handles oats

Gluten and Dairy Free Iced Raspberry Pastries

Before I was diagnosed I loved it when you stayed in a hotel and they served those lovely little breakfast pastries with coffee as a sweet treat after the savoury! If you are like me and miss things like that then this recipe is for you. Don’t be put off the number of steps in the recipe, there isn’t really anything complicated if you take it stage by stage.

As the prep does take a bit of time I would suggest making a big batch of these and freezing them prior to baking, then bake for 25 minutes straight from the freezer when you need them.

You can change the fruit filling to whatever you fancy, next time I make them I’m going to use apple, sultana and cinnamon.

This is a traditional Spanish dish and is often made with a whole spring chicken rather than the diced chicken. I love the simplicity and freshness of the ingredients, and even better the ingredients are all naturally gluten and dairy free.

My Spanish friend always ate this dish in the summer with a green salad and bread (ours would have to be gluten free) and in the winter with rice.
