Gluten and Dairy Free Chocolate Peanut Butter Fudge

I am so excited about this recipe as I really miss fudge and tablet. I miss the creamy sugary taste and all the exciting flavours of the fudge that you can buy. This is not a traditional fudge recipe as I got the creaminess from peanut butter rather than double cream. I’m obsessed with peanut butter and I’m probably guilty for using it in too many recipes.

It is much easier to make than normal fudge and you don’t need anything fancy like a sugar thermometer. Smooth creamy peanut butter with no added sugar works best in this recipe – natural peanut butter can be a little oily.

Gluten and Dairy Free No Bake Chocolate Slices

These little treats are a chocolately, marshmallowy, biscuity bite – and all gluten and dairy free!

This recipe is perfect when you are short on time as it only has two simple stages, mixing together the biscuit base and then topping with melted chocolate. The hands on time is less then 10 minutes with about 1 hour max for chilling time.

Gluten and Dairy Free Red Velvet Cupcakes

Everyone loves a cupcake and red velvet cupcakes have to be up there among the best. I’ve had a go at making a version that is gluten and dairy free. You can also make this recipe as a two layer 6" cake by splitting the mix between 2 cake tins, baking for 25 minutes and sandwiching the cakes together with the frosting.

I love the taste of butternut squash so I’m always looking for new ways to use it in recipes. This risotto recipe makes a lovely simple but tasty supper. If you are using the white wine and can’t have dairy just be careful it doesn’t contain milk. I know this sounds crazy but I keep coming across white wine that contains milk!

There is nothing better than a slice of sponge cake with a cup of tea or coffee. This is a zesty twist on the traditional Victoria sandwich using lemon curd rather than strawberry jam. You’ll see from a previous post that I made a large pot of gluten and dairy free lemon curd and this seemed the perfect way to use some of it.
