Gluten and Dairy Free Cinnamon Banana Cake

I’m known for adding cinnamon to everything and today I decided to having a go at making a banana cake with cinnamon. Rather than just flavouring the sponge I thought I would see if I could get a cinnamon swirl in the middle of the cake. I wasn’t sure how successful this would be and I held by breath as I cut into it, luckily there is a cinnamon swirl!

Gluten and Dairy Free Granola Topped Marble Smoothie

I often have either a smoothie for breakfast or some granola and natural yoghurt. This recipe kind of combines those breakfasts into a tasty treat. I’ve made a tropical smoothie, swirled through a raspberry smoothie and topped with a little granola. I’ve got a few different gluten and dairy granola recipes on the website – I’ve used my choc nut granola recipe which explains why the granola looks quite dark in the photo.

Gluten and Dairy Free Choc Nut Granola

I love granola but the gluten free versions are often very expensive and can be very high in sugar content. I’ve had a go at making a granola using coconut oil and honey to coat the oats – I flavoured it with some peanut butter (I love the stuff), dairy free cocoa and some cashew nuts to make a kind of nut crunch effect. If you don’t want to use the peanut butter or cocoa you can omit these and toss the oats in the coconut oil and honey and maybe stir through some dried fruit.

I love my slow cooker, there is nothing better than coming in from work and your dinner is almost done. I’m a big fan of pulled pork and it works well in a slow cooker. I’ve also made a BBQ sauce to stir through the pork, perfect served with fresh crunchy coleslaw on a gluten free bun.
