Perfect Porridge

Since I’m Scottish I thought I should have a porridge recipe on my website. I can tolerate oats as long as they are certified gluten free so I enjoy a bowl of porridge in the morning.

Try customising this basic recipe, I’ve had it topped with crispy bacon, I’ve added in mashed banana, honey and nutmeg. Another favourite is a little brown sugar, apple chunks and some cinnamon. In the photo I’ve topped the porridge with some strawberries, apple, watermelon and a drizzle of agave.

Gluten and Dairy Free Black Forest Cheesecake

When I made my gluten and dairy free banoffee cheesecake I said in my post I was thinking a Black Forest cheesecake would be awesome. A few of you have got in touch to see if I had made it so I decided to take on the challenge. It is basically a baked chocolate cheesecake topped with cherries and blackberries and I hope you like it.

I tested it out on my parents, my Dad is my partner in crime when it comes to puddings and I’m assuming it passed the test as he left with another piece.

Tomorrow is Chinese New Year so I thought I would upload a little gluten and dairy free dumpling recipe. I’ll be honest and say I don’t really know a lot about Chinese cooking so not sure how authentic this recipe is. I used minced pork for my filling but you can use whatever you fancy. I also decided to quickly fry my dumplings after they were cooked to give them a little crispy outer but you don’t need to do that.

Gluten and Dairy Free Lasagne

Gluten and Dairy Free Lasagne

Right after I was diagnosed I tried making a gluten and dairy free lasagne, and the result was’t the best. I used these mini gluten free lasagne sheets that tasted like wet rice paper once cooked and my white sauce was lumpy. It was not a pleasant experience.

With a lot more ‘freefrom’ cooking experience and a packet of Marks and Spencer’s Made without Wheat lasagne sheets I felt the time was right to try it out again. Thankfully I was pleased with the result and have a recipe I’m happy to share with you.

I only had some Violife dairy free cheddar style slices so that is why my cheese topping doesn’t look grated in the pictures. I also added some minced garlic and parsley to some dairy free spread which I used to make a ‘dairy free garlic butter’ for my gluten free baguette.

For the vegetarians among you I’ll have a go sometime soon at making a vegetarian lasagne.

Gluten and Dairy Free Apple Muffins with Oat Topping

I miss those mornings when you just nip into a cafe and get a treat muffin for breakfast along with my usual bucket of coffee. I’ve got the coffee covered with my soya milk latte but I have been craving a big muffin to go along with it. I’ve made these apple muffins which are topped with oats. A lot has been written about whether or not oats are suitable for coeliacs, personally I can tolerate oats but only if they are certified gluten free. If you can’t have oats then they can be easily left out of this recipe.

Gluten & Dairy Free Passion Fruit Pavlova

I love pavlovas, the crisp meringue topped with soya whip cream and lovely fresh fruit. Meringues are ‘naturally’ dairy and gluten free so make them the perfect choice for dessert. You can customise them however you please, I’ve tried a variety of fruit and I’ve also flavoured the meringue, my favourites being cinnamon and chocolate.

You can make this as one large pavlova or six individual ones.

Review of Marks and Spencer Made without Wheat Fishcakes and Chicken Bakes

While perusing the aisles in Marks and Spencers I was pleasantly surprised to find some of their coeliac range in the fresh produce section. They are now offering a gluten (and dairy free) fishcake and chicken and mushroom bake as part of their Made without Wheat range.

They are priced at £1.70 for a packet of two or two packets for £3. I’ve tried the chicken bakes and was pretty impressed. It is basically mashed potato with shredded chicken and mushroom through it coated in crisp rice crumbs. The salmon fishcakes are waiting for me in the freezer to try another day.

They are a great quick meal as they oven cook in 15 minutes, very handy for busy days. Well worth a try if you are gluten and/or dairy free.

This is such quick and simple dish I feel a bit of a fraud calling it a recipe as it only requires you to boil an egg! I basically just threw together a few ingredients that was lurking in my fridge to make a quick lunch. I thought it looked pretty so decided to take a picture and share it with you (it also tastes pretty good too!)

If you can’t eat eggs you could try replacing them with some smoked ham or maybe for roasted peppers.

Dairy, Egg and Gluten Free Banana Ice Cream

This ice-cream has an amazing fresh banana taste and it is so simple to make and it only has three ingredients. It is made from some dairy free cream, mashed banana and a little sugar (or agave).

As a lot of people also can’t eat eggs I decided to make this recipe that was free from eggs as well as dairy and gluten. I’ve served it with a drizzle of my dairy free caramel sauce (you can find the recipe in the dips and sauces section of the site) and some banana chips.
