Review of Udi’s Gluten and Dairy Free Pastry Mix

I was super excited to see that Udi’s have luanched a gluten and dairy free pastry mix, it’s a great addition to my store cupboard:

Udi's Pastry Mix

It contains the following ingredients:

  • Brown Rice Flour
  • Potato Starch
  • Tapioca Starch
  • Sugar
  • Salt
  • Thickener (Xanthan Gum)

The pastry is easy to make up, you add either butter or dairy free spread into the pastry mix and rub in until it resembles breadcrumbs. In another bowl you beat together eggs and a little vinegar and then stir into the mix. The pastry is then chilled in the fridge. I found the pastry really easy to work with and the instructions on the packet where spot on for the perfect consistency of dough. It was easy to roll out and didn’t stick to anything or crumble and fall apart.

I decided to make an apple tart, so I added a little caster sugar to the pastry and filled it with some stewed apples and cinnamon. The pastry tasted great, light and crumbly without falling apart.

I would really recommend you try out this product, I think it is the best gluten and dairy free pastry I’ve tasted.

  1. This is my first attempt at using your product.

    I found the directions for Gluten free Pastry Mix a little confusing.

    It would be clearer if the butter were measured by weight rather than 3/4 cup + 2 tbsp.

    Also no water is indicated in the list of ingredients. Therefore it would be better to omit the word ‘additional’ and simply state – Add 1 to 3 tablespoons cold water if necessary.
