January is Super Food month at Free From Favourites!

Just to give us all a kickstart to 2015 I thought it would be a good idea to make January super food month. If you follow regularly you will know I upload a lot of cake recipes (and remember I upload what I eat!). So for a healthy change I thought I would upload some gluten and dairy free healthy recipes to set you on the right path for the new year.

Don’t panic though, there will still be some sweet recipes as I’ve been working on raw gluten and dairy free chocolates and grain and refined sugar free chocolate chip pumpkin muffins.

Review of Udi’s Gluten and Dairy Free Pastry Mix

I was super excited to see that Udi’s have luanched a gluten and dairy free pastry mix, it’s a great addition to my store cupboard:

Udi's Pastry Mix

It contains the following ingredients:

  • Brown Rice Flour
  • Potato Starch
  • Tapioca Starch
  • Sugar
  • Salt
  • Thickener (Xanthan Gum)

The pastry is easy to make up, you add either butter or dairy free spread into the pastry mix and rub in until it resembles breadcrumbs. In another bowl you beat together eggs and a little vinegar and then stir into the mix. The pastry is then chilled in the fridge. I found the pastry really easy to work with and the instructions on the packet where spot on for the perfect consistency of dough. It was easy to roll out and didn’t stick to anything or crumble and fall apart.

I decided to make an apple tart, so I added a little caster sugar to the pastry and filled it with some stewed apples and cinnamon. The pastry tasted great, light and crumbly without falling apart.

I would really recommend you try out this product, I think it is the best gluten and dairy free pastry I’ve tasted.

Gluten and Dairy Free Carrot and Walnut Cake with Cinnamon Frosting

I made this cake to test out the new Udi’s gluten and dairy free plain flour. The cake is lovely and moist due to the grated carrot. You can customise this yourself by removing the walnuts if you aren’t a fan or you can change the flavour of the frosting, or just have vanilla frosting.

Review of Udi’s Gluten and Dairy Free All Purpose Flour

This is the third instalment in my series of review’s of the new product range from the guys over at Udi’s. This time I’m testing out their Gluten and Dairy Free All Purpose Flour:

Udi's Gluten Free Flour

It contains the following ingredients:

  • Rice Flour
  • Potato Starch
  • Tapioca Starch
  • Thickening Agent (Guar Gum)
  • Salt

making it a good choice for people with multiple food intolerances/allergies.

Overall I was really pleased with this flour and it would definitely be a great addition to anyone’s gluten and dairy free store cupboard.

It is available to buy at Tesco.

Gluten and Dairy Free Winter Spiced Brownies

This recipe is just my basic gluten and dairy free chocolate brownie recipe adapted to give it a Christmas twist. I’ve added some spices (cinnamon, nutmeg and ginger), cranberries and cashew nuts to make the Winter Spiced Brownie. Package them in pretty gift boxes to make a gluten and dairy free present.

Gluten and Dairy Free Christmas Cake – No Need to Age

Gluten free christmas cake

When I think of Christmas cake my first thought is always the amount of time it takes to make one and having to ‘feed it’ with your choice of alcohol every week for what seems like ages.

My goal with this cake is to make a gluten and dairy free cake that can be enjoyed by the whole family but doesn’t take forever to make. Rather than age the cake with alcohol I’ve cooked and soaked the fruit in cranberry juice, orange juice and port so all the flavours are incorporated into the cake.

I thought I would pull together a few of my Christmas recipes and make them into a gift ideas for your gluten and dairy free companions (or for yourself!)

The first in this series is a gluten and dairy free preserve hamper. It includes the following (click on the item name for the recipe):

I made the chutney, jam and chocolate spread in small jars and placed them in a small basket lined with red and green tissue paper; perfect for a Christmas gift.
