I miss my chocolate advent calendar so I thought I would have a go at making a special gluten and dairy free advent calendar that anyone can enjoy. The idea is each day you get a gingerbread cookie on a stick. The gingerbread can be wrapped in cling film on the sticks to keep it fresh or use cake pop covers.

The advent calendar can be presented in a variety of ways. You could place all the sticks in a small vase or in an oasis, I chose to tie them into 3 bouquets with a piece of christmas ribbon.

Review of Udi’s Gluten and Dairy Free Cake Mix

I was very lucky the other day when the kind people at Udi’s sent me some samples of their new products:

Always excited to try out a new gluten and dairy free product I thought I would start with the ‘Delicious & Fluffy Cake Mix – Sponge Cake’. The mix contains the gluten free flour, sugar and all the raising agents (including xanthan gum) you need to make a perfect gluten free cake. The basic mix is both gluten and dairy free which is great, ingredients as follows:

Ingredients

The recipe on the back of the packet is for a plain vanilla sponge and requires you to add the following:

  • 1/2 cup butter or dairy free spread
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 milk or water, I used soya milk

Instead of making a vanilla sponge cake I decided to make a frosted banana and cinnamon sponge. To do this I halved the amount of milk and added 2 mashed bananas and 2 teaspoons of cinnamon. I was really pleased with the results as the cake was light, flavoursome and I don’t think anyone would know it was gluten and dairy free – which is how it should be:

I made a 9" square cake and frosted the top with dairy free butter cream dusted with ground cinnamon. If you were making a large two tier cake, say for a birthday, you would need two packets of the mix but that would give you a big cake!

I think the plain sponge is a great blank canvas to design your own cake, you could add a whole variety of items from fruit, chocolate chips, nuts, coffee and have a completely different cake every time you used this mix.

The cake mixes are readily available to buy at Tesco and can be purchased for £2.50 each. They would be perfect for people who don’t bake often or I would use them to save time or take away with me as it has all the basics in you need to make a cake. For your info the packet looks like this:

I took the cake into work to share with the team, no-one else is gluten and dairy free, but the cake was finished in the blink of an eye, I think that speaks for itself on how good this mix is.
