Gluten and Dairy Free Ravioli with Spinach and Soft Cheese

Pasta is one of the things people with coeliac struggle with as it is predominantly made with wheat flour so contains gluten. After being diagnosed I started to experiment making my own pasta and it is actually easier than you would expect. This recipe doesn’t even need you to have a pasta roller as it is all made by hand.

As you are left with a few egg whites to use after making pasta I’ll post a recipe on what to do with them.
